Lo MÃximo Latin BBQ

Last Friday at the Masonville Farmer’s Market I met Paul Spence. I think Paul may presently be holding tabs on the most unique stall at the Masonville Market. Paul is there with his business Lo Máximo. Lo MÃximo is a local farm from Kent Bridge, Ontario that is selling Latin Style cuts of meat, as well as traditional pork and chicken. What does a Latin Style cut mean? You really need to go and meet Paul for a proper explanation, as he knew how to pronounce all of the fancy cuts on the above board and he could also precisely explain each and every one of them –  but to oversimplify it, Latin Style generally means it is a ”focused” cut and an overall thinner cut compared to the cuts we are used to in Canada. I will also tell you this – the whole cow is there, the whole kit and kaboodle of the the cow, yup – the heart, the tail, the liver and even the lengua (the tongue). Moo!Paul is also offering some specialty products like Chimichurri (latin parsley sauce that goes on all meat). If you are interested in expanding your taste buds and feeling like you are traveling the world without actually leaving Southern Ontario – Lo MÃximo will soon be offering a Latin Style BBQ that they will be hosting at their house for dinner parties of around 10 people that will show and expose people to the latin way of eating. Paul and his wife will be hosting these events on Friday nights, but they just had their first baby (congrats!), so as you can imagine they are slowing easing this portion of the business in. It sounds fascinating and so much fun! Who wants to do a Latin BBQ with me? All prices are subject to change and Paul also wants people to know they can ask for specific Latin cuts and he should be able to work them in if they are not currently on the list.
