"You want me to eat WHAT?"

This is Henri. He is a rescued greyhound. He is a great dog. One of the best things about Henri is that he”ll try almost anything once – what I mean is that he”ll eat almost anything. Last week I made some roasted root vegetables – you know, just some beets, onions, carrots and parsnips with some olive oil and some balsamic vinegar. Well, I decided to toss Henri a parsnip, just to see. Turns out I should have named him Mikey.. cause he likes it! Root vegetables are available at Trails End, Western Fair Market, Adelaide Farms and even most grocers (just make sure they say Foodland Ontario). Roasted Root Veggies Parsnips Carrots Onions Beets Some olive oil Some balsamic vinegar Salt and Pepper and a little rosemary. A couple cloves of Ontario garlic – whole Preheat oven to 400 degrees. Cut all vegetables to your desired shapes. Place them in a roasting pan with the olive oil, balsamic vinegar and garlic. Throw in your spices, and toss to coat.
